Wayne Farquhar, founder of Dell’uva Wines, spent a decade of his career visiting the world’s top wine regions. With one of the largest collections of European varieties in Australia, Dell’uva Wines is completely different to other wineries.

In the sun-drenched vineyards of Italy, amid vines of intensely flavoured varietal fruit, Farquhar was inspired by growing methods that are vastly different to those commonly practiced in Australia. He had a vision of creating something new for the Australian palate. During his intensive and focused time abroad, Farquhar learned how to achieve excellence from the ground up.

After returning to his conventionally planted vineyard, Farquhar spent the next five years selecting and importing a handpicked range of rootstocks, along with emerging varieties and clones. He established a new and exciting vineyard that showcased viticultural and winemaking practices that had never been seen before in Australia. Dell’uva Wines’ growing practices are optimised to maximise flavour development of the fruit, while its winemaking techniques ensure the flavour is maintained to the end. Its red wines are barrel-aged for 22 months to achieve maximum development prior to bottling. This also ensures they just keep getting better with age.

With 56 different selections available, Dell’uva Wines has one of the largest collections of Spanish, Portuguese, Italian and French varieties growing on the Barossa Valley’s western ridge. After indulging in one of the daily tastings at the winery, pair your favourite wine with a gourmet platter while you enjoy the beautiful surrounding views.




This fabulous Portuguese dry-white variety holds intriguing complex aromas of ripe fruit, with hints of flowers and banana. It is crisp and steely on the palate, with plenty of flavour and a long, lingering finish.


Another innovative Italian variety, this wine holds interesting aromas of black cherries with a just hint of mint. This red variety is delicious on the palate, with a smooth, elegant finish that lingers well.


Originating in Spain, Graciano is one of the innovative red-grape varieties that shows great promise in Australia. It has a great depth of colour, enticing aromas and magnificent, elegant flavours that have a lingering finish.


Consistently smooth from start to finish, this svelte and classy wine originates from Georgia and is grown mainly in the Kakheti region. Almost black in colour, with smooth, rich flavour and crisp acidity on the finish, this wine is auguring well for its longevity.
